What to prepare: Shiitake powder and ketchup or mayonnaise.

Mixing a small amount of shiitake mushroom powder well into the ketchup thickens the umami of the tomatoes, increasing their sweetness and softening their acidity. Along with the umami, the salty taste will also become stronger.

A small amount of shiitake mushroom powder mixed well with mayonnaise will thicken the umami taste of the egg and soften the sour taste. Along with the umami, the salty taste will also become stronger.

Neither of them taste shiitake at all.

Since saltiness gets stronger as umami gets stronger, starting with the shiitake powder instead of adding it at the end will make the dish less salty.
