Beta-glucan boosts immunity

A study at the University of Florida examined the effects of consuming 5g of dried shiitake mushrooms daily after rehydrating and cooking them. The study analyzed data from 42 adults.

   - NK-T cell activation → 370% increase  

3. Gut Immunity Improvement  
   - Salivary sIgA (gut immune marker) → 12% increase  

4. Inflammation Reduction  
   - Blood CRP (inflammation marker) → 30% decrease  
   - Inflammatory cytokine MIP-1α → 67% decrease  

These results suggest that eating 5g of dried shiitake mushrooms daily may boost immunity and reduce inflammation.

◆ Why Do Dried Shiitake Mushrooms Work?  

Researchers believe that certain components help "prime" immune cells, making them more responsive to pathogens.  

One key compound, beta-glucan, may interact with gut immune cells, enhancing overall immunity. However, the study did not test beta-glucan alone but rather the effects of whole shiitake mushrooms, meaning other compounds may also contribute.  

This study suggests that 5g per day is enough for immune benefits, with no significant difference between 5g and 10g in illness rates or symptom duration.
