In the spring, seedlings will grow from stumps we cut for Shiitake. New trees grow back from the stump. The oak tress on the mountain will regrow and the forest undergoes a sustainable 15-years life cycle. Our Forest-grown Shiitake cultivation approach has been used for over 1,000 years.
Shiitake cultivation is not only sustainable but also regenerates the forest and mountains.
When sawtooth oak trees are cut down, the forest ground is bathed in sunlight, and new shoots sprout from sawtooth oak stumps, allowing undergrowth and new trees to grow.
Allowing the mountain to absorb more water and prevent soil runoff.
Young, growing trees also absorb more CO2 than older trees.
Shiitake cultivation regenerates the mountain in about 15 years without planting trees.

In addition to the Grand Prize, we also won the Minister of Agriculture, Forestry and Fisheries Award.
We outsource work to local disabled support facilities to remove foreign matter from shiitake mushrooms before grinding them to powder. We provide the disabled with regular and fair wages.
The number of facilities where the disabled can work has increased to seven as sales of shiitake powder grow, and smiles with pride are spreading in the community!
