The drying and rehydrating process of Shiitake produces "Guanylate," a natural Umami energizer. Guanylate amplifies the Umami taste of all foods. We are continuing a 1,000-year-old, sustainable Forest-grown Shiitake approach, using sweet sap oak tree logs. Japan's most famous cooking school, Hattori Nutrition College, recommends our Shiitake.


Greatly improve the flavor and boost the Umami of any of your cookings! Unlike Dried Porcini, Shiitake can enhance the taste of your cooking without adding a mushroom flavor. You can add more powder to produce a Shiitake flavor. Our Shiitake Powder has a larger coarse grain to add a deeper flavor and a finer grain to add flavor quickly.

Recommendation: 1 dry TBSP or 1 pre-soaked tsp serves four. By adding a little water and waiting 10 minutes before using, maximizes 3x the Umami Flavor!
At first, do not add too much Shiitake Powder to the point where you can taste a Shiitake flavor. You may want the Shiitake Powder to enhance the Umami taste of other ingredients of your daily cooking, not add another Shiitake layer of taste. Of course, you can always add more if you like a stronger Shiitake flavor. Also, your foods may taste saltier despite using the same amount of salt. Using Shiitake Powder will allow you to reduce the amount of salt intake with no effort.


Shiitake powder will not dissolve but will produce a delicate broth.
Coarsely ground to deliver a deep flavor, it will linger on your tongue. To improve the quality and taste, we reduce the amount of moisture content to <9% vs. 12%+ for other Shiitake brands. Moisture reduction creates additional fine grains to complement the coarse ground. Fine-grain works quickly and, it will take about 10 min for the Coarse-grain to boost the Umami taste of your cooking swiftly and deeply. If you want to maximize the natural Umami taste, we recommend you to rehydrate the Shiitake powder by using a small amount of water before you use it. When you rehydrate dried Shiitake, it generates Guanytate, which makes your cooking more delicious.
